If I wanted to add AM seats to the 1/48 Tamiya F-14A, Which Ones?

The Verlinden seats would be 1st choice, followed by Aires/Quickboost (Aires has PE belts, Quickboost is all resin). The Verlinden seats get the padding right, from what I've seen most other manufacturers only do the 'issue' padding 'ribs' which most service jet pics never seem to show. -
Block 90 I believe.

Danny Coremans said not too long ago that they will be releasing an updated version of the Tomcat book at Scale Model World in the UK in November, it should also be available internationally so hopefully you can get one soon! I have the original and it's a fantastic resource for the later Tomcats.

F/A-18A and F-16 Aggressor/Adversary - what do I need?

What scale? In 1/48 the Tamiya F-16C/N has everything you'll need for the Viper, the F/A-18A would be easy to convert the Kinetic bird to an A by omitting several antennae and removing the middle rounded lump on each tailfin. Or you could find a Hasegawa F/A-18A and update it a bit with resin/pe if you like. -
Fighertown 48080 decal sheet will be a good starting point, though you will need a TCS below the nose and probably the 'L' tail brackets.

Well, not a lot of options really, so this may be the only gig in town. However, easier than hoping for decals to match the kits airframe date, make the aircraft match the decals. I think your best bet is going to be to wait for Darren Roberts to make his aftermarket sets as you'll need the following: - 'L' bracket tail stiffeners - 7 louvre gun vents - TCS fairing. I have no idea how long it will take to have these sets available, but as Darren is a Tomcat afficianado, I imagine these will be out ASAP.
