As for models that I don't have in my stash, there are a few. Start did a few other variations of the Energia booster in configurations that were planned for it (never flown). They've also got a couple other Proton variations as well for certain payloads (such as Proton Zvezda and Proton MIR).

Maquette issued a Soyuz TM version of the Apex R-7 kit at around the same time they did the SS-6 kit. Meteor Productions also issued an all resin R-7 Vostok kit based on Ben Guenther's excellent kit master.

The 1/288 Burans are pretty numerous, but for 1/144 you have to go to the aftermarket as Rho Models did a nice one in 1/144 scale (Realspace Models plans to reissue it someday). The biggest Buran is the one with the Atlant transport from A-Model, although I am holding out to see if they might eventually do a full Buran Energia in 1/72 as opposed to just a stripped down Buran.

Then for the Nova N-1 booster, the only kit I know of for that is the excellent Realspace 1/144 kit. But, there are a few paper models of the thing available for download. I saw one built a few years ago at IPMS Nationals and it looked great for paper!
